Bread from no yeast for reals

Here’s the sourdough smackdown, Mom vs.  Dad.  Mom’s is in the foreground and dad’s in the back.  Dad’s was bigger.  Mom’s raised for like twice as long.

My yeastless starter:

1 cup dechlorinated water, 130F

1 Tbsp sugar

1 cup white flour

Cover loosely and keep in a warmish place.  Mine was bubbly in 16 hours.  I fed it 1/2 cup each water and flour, and 12 hours later started cycling the reserve into the fridge.  (That means keeping one half cup to mix with a cup each of water and flour, and refrigerating the rest).
